Point LB to server files instead of local host?

I am new to launch box.  I had it initially before it went away for a bit but only on my phone.  I find myself with a lot of spare time so I started messing with it on my laptop today.  Is it possible to use my online server (mostly use it for PLEX / Media / saving family stuff) instead of hosting files locally or does everything have to be downloaded to a local machine to use?  Server speed and traffic isn't an issue.  This is only for me not to share.  I am just exploring options.
