Optimizing Launchbox for Arcade machine and 800x600 resolution, plus missing screenshots and such

Hello-

I am resurrecting my 20 year old Mame cabinet.  It is a new computer build, but the rest is the same.  I have a Wells Gardner D9200 (s)VGA monitor in the cabinet and the best resolution I can get is 800x600 on this monitor.  This has made Launchbox challenging because some of the menus are not built to work with 800x600, but I got mostly through the setup of Mame on it.  I plan to run  MAME, NES, SNES, and maybe Daphne when I am complete, but for now am focused on MAME.  I added the Arcade emulator to my setup and pointed to my Mame (GroovyMame) folder as well as my ROMS.  I am not using a full set, only the 700 or so ROMS that I want on the cabinet.  I let it add my roms and go through and download all meta data and such and was surprised to find that it doesn't have many screenshots or marquees or anything for the ROMS i have loaded.  I have "Boxes" for most of the ROMs which are essentially posters and don't look great.  I have the MAME extras downloaded and visible when just running MAME normally, but those screenshots don't get imported into Launchbox it seems.  It also only shows a single row of 3 games and partial row of 3 games below when i turn off both sides in the default theme.  So my questions I think are as follows:

-How do I get all the rest of the artwork to work with Launchbox easily?  Can launchbox just look at my Extras folder and use screenshots, marquees, etc from there as well for missing ones it didn't grab?

-Is there a theme or something I could use that would give me like a list on left side and when I scroll the list the right side would just switch screenshots for the game I selected?  Trying to figure out how to make this work best with a dedicated arcade cabinet

- Is there a way to customize the menu interfaces to work with joystick as I don't have a keyboard or mouse on my control panel

What else am I missing?  Is anyone using Launchbox for dedicated arcade cabinets?  Maybe I jumped the gun and bought this and should have instead used a different frontend more suitable for a cabinet?
