I think it's important to make it look and perform like a modern game while still feeling like the originals. Bonus content in the form of unlockable galleries and that sort of thing can be fun. An option to swap between old and new graphics and soundtracks is nice too.

For me it hast to be a more complete version of Rare Replay and for it to release on Steam.

All of these have multiple games in a series but you really can't go wrong with any of them and swapping between them is a lot of fun. - Super Smash Bros. - Mario Kart - Mario Party - Halo Master Chief Collection - Jackbox Games

How about a Banjo Kazooie collection? Just the main games would be great but may as well throw the others in too.
