When you add redream as an emulator to LB, it should automatically add the correct settings, including the exit options in the running script and exit script sections.  But yes, the exit combo for redream is Alt+F4 by default.  To use a controller to exit games, you need to turn on controller automation (in both LB and BB - if you have a premium license).  Once you turn on controller automation you can them map the exit option in the mapping sections to whatever controller button (or combo of buttons) that you want to use ...it's up to you what you want to use.

As for save/load states, I believe redream does support them, but only via its built in menu system.  I'm not 100% sure if you can map a button to auto load/save to those states or not.  But, you should be able to map a button to open the main menu of redream, and from there access the load/save options.
