Getting started, newbie build advice

I recently purchased Launchbox Premium / Big Box and have been playing around with it for the last week or so.  Kudos to the creators, it's a very slick application, I absolutely love it! 

For my build, I'm using a re-purposed Dell Optiplex 9020 MT, running a 4th gen i7 4790 CPU, 24GB RAM, a GTX 1060 GPU, and will shortly be ordering an SSD and a large 7200RPM spinner for storage.

Before I plough ahead with my build I wanted to get some advice on the optimal location to install Launchbox and the emulators.  Performance wise would it be better to install/run Launchbox and the emulators from the SSD, using the spinner solely for rom storage?  Or am I just as good installing Launchbox and the emulators on the spinner?

As a secondary question, is it better to have one large storage drive, e.g. 8TB, 10TB, or even 12TB, or multiple smaller drives, e.g. 4TB / 6TB?

I will only tell you what I do in my setup.

Everything is on the mechanical hard drive which is a 4TB Western Digital. While I do have a 512 gig SSD I only have my operating system and larger open world modern PC games installed to it. I don't notice any load time issues with LB, emulators or roms on the mechanical drive but I also do not have any of my roms compressed in zip format so there is no decompressing required before playing.
