Driving Arcade Games - Controller issues

I have a stand up 6 button arcade machine running Launch box / Big Box, and the majority of racing sims (across multiple game platforms) dont work using a joystick and 6 button config, e.g. arcade game Pole Position, loads all Ok but none of the arcade buttons are set to be used for the acceleration so cant play the game. 

Is there a controller config I need to change at a game level. Sorry I'm not to tech savvy... new to this launch box thing....

Launch a game and hit Tab on your keyboard. Then map under the options for "Input (this machine)". Using Pole Position as an example you will bind your joystick under the "Dial Analog Inc" for turning right and "Dial Analog Dec" for turning left. Gas, brake, and shift are mapped to "Pedal 1 Analog Inc", "Pedal 2 Analog Inc", and "Gear Change" options.
