I want the list to be smart enough to hide uninstalled games

I don't want to manually hide games if I uninstall them.  This should be automatic and they should reappear if I install them again.  I want my list to show Installed PC games + emulator games

So make a auto-populate playlist that is only the installed games and use that instead of the raw platform.

yeah I started going this route, but then when going into BigBox and applying the custom filter, I couldn't use the Wall View like I can when just looking at the Games list.  I tried multiple themes and none of them are giving me what I'm looking for.

Not sure I understand your dilemma. You can certainly view a playlist in BB in whatever theme/view you want so I don't understand what you're running into.

hmm, I seem to be missing something then.  When I create a playlist and then view the playlist in BB, it forces me into the "playlist" view with a very limited number of view options.  Can you set a playlist to use a specific view type like Games View?  For example with the default skin, I want to use this playlist with the Wall View 4 and nothing I have seen lets me do that. 

This seems like a very obvious thing to do...just let me auto remove games when they are uninstalled.  This work around solution is very obnoxious.

There is a setting I believe is on by default regarding allowing each to have their own. If that is on go to the playlist in question and use the "Change Theme" and "Change View" (you'll likely need to set these) to change to what you want it to. If the setting is on that change will save and you should enter that theme/view combo again anytime you enter it.
