is possible to use an arcade stick instead of the keyboard to launch, play and quit games

Yes it is possible, if your arcade stick is recognized as an Xinput game controllers it should just work like any other controller. If you arcade stick is seen by Windows as a keyboard like how the X-Arcade Tankstick is then you just have to map the buttons in the keyboard section of BigBox's options.

Thx Lordmonkus, my arcade sticks is recognized as an Xinput, so far it's difficult to change between systems with the joystick and I dont know how to quit the game and return to launchbox. Do you any idea how to do that?

Setup button combo in the Controller Automation section of the options in LB and BB mode.

This sends the Escape command from your keyboard to the emulator which a lot of emulators use to close out. For the emulators that don't you will need to setup an AHK script to send the close command to the emulator, you can find a bunch of useful AHK scripts here in this thread:
