Today I tried to install an update to PCX2 on my laptop. The upgrade failed and now I can't play any of my PS2 games. When I try and launch one of the games it's giving me an error saying the z.dll file is not found. What's the best way to resolve this issues? Do I need to delete all the roms, the emulator, and start over from scratch?

If you're talking about pcsx2, in LaunchBox you should be able to edit the emulator and click Reinstall.
