Can Launchbox /BigBox use Loading logos and if so where can I put them ?

You'd need to modify a Startup Theme.

e.g. Default - Sony Playstation.xaml
You'll need to make a copy of the Default folder, edit the copy then set your Startup Theme to the copy.

About line 96, you should be able to change the <TextBlock (the one where the Text is binding to NowLoadingText) to an <Image and point it to your image file. (other changes will also need to be made in the following lines to make it complete)
