If you are getting graphical issues with any of the current N64 emulators check the settings of the emulator. All the current emulators should be running a game like Mark Kart without any issues.

When you got to the image type selection in the importer did you check or uncheck the one for advertisement flyer ?

Maybe, to be perfectly honest I haven't bothered looking at it so I have no opinions or thoughts on it one way or another. It's also a multi emulator which I avoided recommending for the purposes of this guide to keep things simple for people. Often with multi emulators some systems are not as well emulated as others within the emulator. 

Now that I look at the original post the N64 section should be updated to use Simple64.

It shouldn't cause performance issues. I have always had the details screen info disabled and never had an issue.

Yes, I believe the default binding is the 6 face buttons being ABC and XYZ, same layout as the real controller.

Put the Hori FC into Xinput mode with the switch.

I have 2 Hori FC pads and never had an issue with them in Windows.

Don't copy or move, leave the file where it is. The emulator requires the folder structure of the game to remain and by copying or moving you break that.
