@Sithel Test this and let me know if it will work. If you want random platform art it has to have all the images in the backgrounds folder. You can remove art for any system you do not have to reduce size more. I tested with quite a few systems and no issue, but let me know if you have any.
"Simple" has no game images, cart/disc images. Just Unified backgrounds, Platform clear logo, Game clear logo, and Now Loading text.

What version Launchbox/BigBox are you on? This was an issue before, but Jason did update and it was fixed.

I would recommend the AHK below instead. The original code will work, this one just properly closes the emulator instead of forcing it closed. This is better to also use with emulators that have save states that will require the game/emulator to be exited properly to create the save state. This was identified from an issue with Higan and the original code. It did not close Higan how it wanted to be closed and was not properly saving games on exit.
You can use it with any emulator. Just simply change the "Jnes.exe" to the name of the emulator's .exe.

Could you just make 1 theme platform.xaml and I could just copy it to make the rest? Here's pic of one you have that I changed to what I was looking for. Thanks again and any help is appreciated !
I am actually in the process of simplifying the theme. Jason provided an update and it will allow less artwork now. The theme will still require the platform background artwork as that is the basis of it.
Do you want to use just one background image for all platforms? If so I can make a version for that. Also you would not need to make any more xaml. I would make just a default and it will work for all since you do not want disc or cart images. Let me know and I can get an edit over to you.

Just go to the one you posted in the downloads section and edit it. You can add more updates to any downloads posts. You can also preview of the files as well.

If you run a game inside Mame outside of Launchbox will Mame still run?

I've never selected a device in that section since I have used LB. Just checked the box to Enable Gamepad/Joystick Input and then go into the buttons and automation sections to configure my buttons.

It would require a little bit more code than that. Also I do not believe videos are supported right now in the startup themes. Not too savvy on coding so not 100% sure.

Part of the issue could be if you allow the importer to download from both the Launchbox DB and Emumovies. Launchbox may not be able to tell the difference between the two images. You could probably run a checksum on the images to confirm they are in fact duplicates. Though the image looks the same a slight variance would in fact make it not.
Running checksum on my arcade 3D boxes here is an example of Alien. Same image, one ending in 01 and other 02, and you see the checksums are different. I am not saying this is the cause for all duplicates, just something to take into account.

There is not a setting in Launchbox to change this. You will likely need to create an Auto Hot Key script to change which keystrokes you have to hit to send "Esc" to exit the emulator.

Yes, you can delete them. Keep in mind I think that if you ever want to install DLC/patches you will need the pkg file so maybe back them up somewhere or keep the URL where you got them from stored.

If you move the folder you can right click the platform and edit the image folders paths. It is time consuming as you have to do them 1 by 1. You may be able to go into the xaml and edit as well. Cannot remember been a while since I moved image folders. Video path I know is in the xaml.
You could also create symlinks from the LB image folder to the new image folder.

Nothing looks wrong there. What about pics I mentioned from an edit game?
If you try using the other core to run the game from launchbox does it crash as well?

If it runs directly in Retroarch and not through Launchbox you likely have a disconnet in your setup within LB. Can you post pics of your setup. A lot of times it helps us to see your settings
In the edit emulators screen share pic of the Emulator Details tab and the Associated platforms tab. Then go to a game that will not play and edit it. Share pic of the Launcher tab and the Emulation tab.

Go in Launchbox to Tools>Manage Emulators and choose Retroarch then edit. In the associated platforms tab there make sure you have all the platforms listed that will use Retroarch (The name listed in the Associated Plaforms tab must match the name as you have them called in Launchbox). Also make sure for each platform you have the correct core listed that you want to use.

Click on one game then hit CTRL+A to select all and then right click and choose Refresh Selected images (or hit F5) and see if that helps. You may just need to refresh the image cache.

Do you run Launchbox as admin as well? If you do it is typically recommended not to.

It is known that the new startups do not work well with RocketLauncher. There are a couple threads out there, but here is one that may have a work around... look for mrcleen74's post. It does not specifically mention Dolphin with RL, but the step might be worth a try.
Big Box Playlist Refresh

Yeah it should be fixed at least I remember Jason putting a fix out for something with playlists and auto-updates not happening. I am on the latest beta and just tested adding a new game to a manual playlist and the count updated. I think the other machine is still on 9.3. I will check and if so test on 9.3.
